Zucchini noodles with chicken spinach feta meatballs are such a favorite of ours. This meal is satisfying and delicious. You could totally make the meatballs ahead of time.

For taco Tuesday, here are our favorite marinated flank steak fajitas. I love to make everything on the grill, which is super easy clean up.

Next up: chimichurri chickpea panzanella salad. I freaking loooove this meal. And you can use the chimichurri all week long. It’s delicious on eggs.

A summer chicken pot pie galette is the perfect comfort food. This is a little time intensive but totally worth it. And the leftovers are good too.

Use that leftover chimichurri on this grilled corn, tomato and avocado salad. It’s a wonderful, light summer meal. You can throw some chicken or shrimp on the grill to add to this or even use the leftover flank steak from Tuesday.

Start the weekend off with this white clam sauce pizza. It is SO GOOD and tastes just like summer. You can totally use canned clams too.

For breakfast, I’m going with these butter roasted cherry swirl overnight oats. And for lunches? Whipped ricotta toast with pineapple and sea salt! It’s amazing.
