What To Eat This Week: 8/9/20.
Welcome to another week of WHAT TO EAT!
It’s August and hot and summer produce is fantastic so let’s make the most of it.
Let’s kick things off with the best ever tomato panzanella salad. This is PERFECT. I love it on its own, but if you feel like it needs something more, add some grilled chicken or fish or even steak on the side. It’s the best summer meal ever.
Next, use some of those garden vegetables and make sheet pan gnocchi! This is a great quick and simple pantry + garden meal that everyone goes crazy over.
Fish taco bowls are up next! A very versatile meal and one that you can totally customize, depending on what’s in your fridge!
This summer pesto mini meatball soup is a lovely comforting summer meal. This makes for great leftovers too.
Try this potato chip frittata towards the end of the week. It’s ridiculously easy and delicious served hot or cold.
Finally, end things on an amazing note with summer squash brown butter pasta. It’s to die for. One of the best things ever!
For breakfast, make a batch of these spinach and red pepper egg cups. For snacks, these no bake oatmeal peanut butter balls are my favorite. And lunches? I’m going with my hummus havarti veggie sandwiches.

That panzanella salad caught my eye, and I’m so glad it did! We had it for dinner last night and it was incredible. You are correct that the dressing is delicious and just perfect. Will definitely be made again.
