Here we are with what to eat before Christmas!
In this hectic week, I’ve given you some delish dinner ideas and lots of options for the days after the holiday too!
What to eat this week:
Kick things off this week with my crispy chickpea chopped salad. It’s super flavorful and satisfying. Also a nice light meal ahead of holiday eats!
For taco tuesday, go with this turkey taco nacho skillet! This is so easy and comes together so quickly. We adore it. You can serve it with chips or even plain tortillas.
On wednesday, keep things simple with this broccoli cheddar stuffed spaghetti squash. Leftovers of this are great too and would be excellent for lunch later in the week.
If you’re celebrating christmas eve, I suggest making this espresso rubbed filet with truffle risotto. The meal is so warm and wonderful. And if you don’t celebrate, it just makes for a delicious, special meal in the middle of this wacky weeek.
For christmas day, we’re going to enjoy this crab topped salmon! I think we will also make my broiled wedge salads because they really are a hit – tons of flavor and crunch.
For the rest of the week, I’m going to have lots of smoked salmon on hand to make mini versions of my smoked salmon platter, sandwiches and bagels. I also want to make my smoked salmon tart! I also am going to make a batch of my favorite tortellini salad!
I hope you get to enjoy these one hour orange cinnamon rolls this week! They really are so easy to throw together. For lunches, enjoy this pecan crusted chicken salad with citrus vinaigrette along with smashed chickpea salad, which you can keep on hand in the fridge.

Planning on making the orange rolls tue. For dinners I’m making red beans and rice, butter chicken, Reuben bowls, pizza, smoked Prime rib with smashed rosemary potatoes. Merry Christmas to your family
