What To Eat This Week: 3/7/21.
I’m starting to feel spring!
I know we still have a few more weeks, but I couldn’t help but add a few spring-like dishes to this week’s menu.
What To Eat This Week
Kick things off this week with my parmesan pasta frittata! Top it with spring greens for such a fresh but filling meal.
Next up, guacamole turkey burgers. We love these. You can eat them deconstructed too, which is how Emilia loves them for dinner.
Skillet sausage and kale lasagna for mid-week! The leftovers of this are just as good as the first meal.
We’re doing buffalo cauliflower lettuce cups for dinner later in the week because it’s warming up here. I want something refreshing and crisp!
Lemon butter shrimp and broccoli for Friday! This meal is embarrassingly easy but so classically good at the same time.
Finally, finish things off with this marinated chickpea panzanella! It’s been ages since I’ve made this and we love it so much.
For lunches, I’m going with my smashed chickpea salad too. On toast, of course. And breakfasts are my classic peanut butter overnight oats!
