What To Eat This Week 9/26/21.
Let’s be honest, I’ve been looking forward to fall menu plans for weeks!
I switched up the format of the weekly menu! Let me know which you like better – this format where you see all the photos, or the previous format!
Kick things off with my roasted cauliflower pitas! These are so satisfying and you can use any kind of hummus you love.
Next, try this chipotle chicken cobb salad. You probably have leftovers from the can of chipotles, so use it for this!
Maple sheet pan sausage with butternut and brussels is up next! Chop extra butternut squash for tomorrow’s meal too.
Then make this smoky butternut kale salad with apricot vinaigrette. It’s a dream.
Heading into the weekend, do some cheeseburger meatballs with special sauce. Serve these like a salad with lettuce and tomatoes for some extra crunch.
Finally, sheet pan shrimp nachos! For ease and deliciousness.
For breakfasts, make a batch of my apple cinnamon baked oatmeal.
And for lunch, the best ever egg salad!
