There’s so many favorites on the menu this week!

With spring in full swing, I’m craving all sorts of fresh flavors – everything lemony, herby and crisp!

What To Eat This Week

Kick things off with my new spring couscous bowls. These are wonderful and perfect for spring.

Taco Tuesday! I’m going with my turkey taco skillet, whichI love to serve with chips or even lettuce cups. It’s delish.

Next up, crispy buffalo chicken wraps. Is there anything better?

My crispy chickpea chopped salad is surprisingly filling. Love serving this with some grilled or toasted sourdough.

Salmon chowder with dill dumplings for the win! This is a hearty soup that feels light at the same time.

Keep the weekend easy with bacon brussels fried rice. This is one of my fall back meals – super easy and very flavorful.

For lunches, I’m making a batch of my pickled cauliflower and scallion cream cheese for sandwiches. It’s divine.

And breakfast = shaved egg avocado toast! An oldie but goodie.
