What To Eat This Week: 7/12/20.
If we have to cook at home so much, I’m determined to make it delicious!
And this week’s menu just screams summer…
Let’s kick the week off with this incredible summer tomato pie! It’s absolutely delicious. You can make the crust this weekend to prepare too. It’s a bit rich, so I suggest serving it with a house salad or your favorite greens.
Our favorite bruschetta chicken is up next. You can serve this over pasta as the recipe calls for, or even just make the chicken and serve with roasted broccoli. We love this meal so much.
Garlic butter scallops with fresh watermelon salsa for Wednesday. The best summery meal there is and it comes together super fast.
I love these buffalo cauliflower lettuce cups. They are spicy but refreshing and really pack a punch.
Make this sticky sheet pan chicken with pineapple salsa and serve it with the smashed potato salad. It’s such a good meal!
For the weekend, throw together these open faced steak sandwiches with avocado horseradish. Serve with chips on the side!
When it comes to breakfast, I’m thinking about a batch of coconut cream chia pudding. YES. And for lunches, maybe this gruyere, fig jam and arugula egg sandwich.

WOW! These all look delicious. It’s making me hungry even though I finished eating not long ago.
This meal plan is so summery and was super inspiring for me! I ended up taking a bunch of pieces of it to create my own meal plan- definitely doing the buffalo cauliflower cups, making the bruschetta (to top corn cakes with), and the garlic butter scallops for sure! I’m so happy Sunday is my grocery run day! Thank you!
