What To Eat This Week: 7/19/20.
It’s hot out and I have some excellent meal ideas for your week!
This week’s menu is loaded with summer flavor…
Start off the week with these baja grain bowls! They will be incredible because summer garden produce is perfect right now. You can always throw in chicken or shrimp or tofu or more beans if you wish. I also suggest prepping the grains over the weekend so you can grab them and go!
Next, these grilled chicken and burst tomato skewers! Serve with the blueberry summer salad on the side. I love this meal together!
Summer pesto mini meatball soup for Wednesday! So many of you have made this lately and love it. It’s a comforting meal, but still light and summery. Super satisfying too.
Try my salmon salad with hot ginger vinaigrette next. The warm dressing is just to die for.
Summer skillet gnocchi is up next. An oldie but goodie! We adore this dish and it has so much flavor. The kids love it too!
Try some steak frites for the weekend! I would grill the steak now instead of skillet sear and these are my favorite air-fryer fries!
If you need a weekend brunch idea, this everything smoked salmon tart is where it’s at. For lunches, make some chicken salad stuffed avocados! And breakfast is calling for my favorite peanut butter overnight oats!
