It is crazy that we are at the end of March already!
This week’s menu has lots of spring flavors and easy dishes!
What To Eat This Week
Kick the week off with some breakfast for dinner! This asparagus quiche with hash brown crust is so delicious – and even as great cold the next day for lunch.
Try the turkey taco skillet for taco tuesday! Serve this with chips, with salad, with tortillas – anything, really!
Pulled chicken guacamole sliders are up next! Especially good if you have taco leftovers from the day before. Comes together so easily.
Make this spring nicoise salad for mid-week! Sometimes I just make a version of based on what I have on hand. I am loving asparagus right now.
Sesame shrimp quinoa bowls are happening next. I love these so much – satisfying but light at the same time.
Finally, make some of my chicken romano meatballs! Serve them anyway you’d like – I’m partial to this spring pasta salad on the side right now. This can be the perfect meal at home for easter if you celebrate.
For lunches, I’m going to do some tuscan tuna melts! And breakfasts – my immunity smoothie that I love so much.

This all sounds delicious- and easily made kosher for Passover! I’m planning the nicoise & the taco skillet (minus flour). Yum!
