Kicking this off this week with asparagus tartines with hard boiled egg vinaigrette! This is SUCH a delicious meal and perfect if you have leftover eggs from Easter!

For Taco Tuesday, make these beer braised chipotle chicken tacos! Super flavorful and customizable. We adore them.

Next up, brussels and caramelized onion pizza with pistachios. Even if you don’t want to do a dough that rises, you can make these into a flatbread or french bread! Definitely more options if you need them!

Smoked sausage and kale gnocchi skillet for mid-week! This is a meal that comes together so fast and it surprisingly delicious.

I love making my tomato soup (it’s unreal) ahead of time to have for a quite meal during the week. Throw together some grilled cheese sticks and you’re good to go!

Finally, try this brown butter lemon salmon with my grilled asparagus caesar on the side. I can’t get over how much I love this asparagus!!

For lunches, I’m going with my best ever egg salad, of course! We have all the eggs! And for breakfasts, my vanilla ricotta toast with bananas.
